Just wondering if it is possible to create folders or somehow collapse/archive star rating sections in the Demonstrator tool, so that it is easier to manage for longer assessments?

currently, as Franco has mentioned - it is not possible. We certainly can have a look at this feature and plan to implement it in the near future.
